Earlier this week, we took a look at how this is shaping up to be a good year for Oregon wild mushrooms, thanks to September’s rains and an early return to cooler temperatures. We also shared four recipes from recently published cookbooks that give mushrooms a starring role. But we’ve featured mushrooms in many recipes over the years, and these are 10 that have proven popular in the Foodday Test Kitchen.

Chicken Stroganoff With Mushrooms, Sherry and Sage (above): This recipe calls for cultivated crimini mushrooms, but would be ideal with chanterelles.
Asian Short Ribs With Daikon and Shiitake Mushrooms: This hearty fall dish calls for dried shiitake mushrooms, but would be even better with fresh ones.
